Well there are strobists out there that will tell you to get the light off camera... but that's another thread.
I like the color better but I understand the need for the other look for the client. A lot of time went into those flower arrangments.
As for posing, I understand what you meant about having stuff thrown at her feet. The alternative I would suggest was to have her sitting on her hip with her legs extended, bring the dress out to give a longer appearance to legs. She would support herself on one hand and hold her bouquet with the other hand (preferably covering up any trouble spots, but as low as possible to give her torso a longer leaner appearance). The one thing to watch for would be to not have her put all her weight on the hand that is supporting her, it will give an unflattering shape to her upper arm.
Of course, you can't go back and do that again with this bride, so try it next time.
